Healthy Banana Bread

After switching my diet to eliminate sugars, I found a great appreciation for foods that naturally sweeten dishes, and thus began my obsession with all things banana. What I love about banana bread is that it's pretty fool-proof. Even with a wheat-free, dairy-free, sugar-free version, it is pretty hard to get this recipe to NOT taste like sweet banana bread. So let's get to it. . .

INGREDIENTS
4 ripe bananas
1 teaspoon alcohol-free vanilla extract, or 1-2 vanilla beans
1/3 cup almond butter
2 eggs
½ cup coconut flour
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon sea salt
Handful of carob chips, walnuts, or coconut flakes (all optional)
INSTRUCTIONS:
Mash bananas in a large mixing bowl.
Add the rest of the wet ingredients and mix until smooth.
Add the dry ingredients and mix to combine. At this point, add any optional ingredients, I sometimes use a cup of carob chips.
Bake at 350 degrees Fahrenheit for 35 minutes, or until a toothpick comes out clean. Makes 6 large muffins or one 9” by 5” loaf.
