Dairy-Free Nacho "Cheese" Sauce

This recipe hardly needs any kind of introduction, just that it's pretty hard to mess up, so if you've been craving gooey, cheesy nachos, but you are dairy-free, you could be eating guilt-free, delicious nacho cheese sauce in just 15 minutes!!
TIPS:
You can absolutely blend this all together while the potato and carrot chunks are still hot, as long as your blender can handle hot foods. I actually prefer this sauce warm, so if you can, blend it right after you take the potato and carrot out of the water!
One of my favorite things to add to this sauce is half a jalapeno pepper, or a drop of hot sauce-- it makes it more nacho-cheesy, in my opinion.
